Today, we're diving into the flavors of Hatay Turkiye with two delicious mezze recipes: Fava Beans Dip (Bakla Ezmesi) and Chili Walnut Dip (Cevizli Biber).

Fava Beans Dip, known as Bakla Ezmesi in Turkish, is a creamy, flavorful dip similar to hummus but made with fava beans instead of chickpeas. This dip is similar to Fava (a popular appetizer in both Greece and Turkey), also has different varieties in the Levant region with slight differences in preparation.

Chili Walnut Dip, or Cevizli Biber as known in Turkiye, is a spicy, nutty dip reminiscent of Muhammara but with a twist. This version includes onions and uses rehydrated chilies instead of roasted peppers, omitting the pomegranate molasses mostly found in traditional Muhammara.

Fava Beans Dip (Bakla Ezmesi):
• 1 cup dried broad beans (fava beans), 250 g
• 5 – 6 garlic cloves
• 1/4 cup tahini
• 1/4 cup lemon juice
• 1/2 tsp (ground) cumin
• 1 tbsp extra virgin olive oil (extra for garnish)
• Pul biber (Aleppo peppers), sumac, chopped parsley to garnish
• Water to cook the beans, about 2 liters
• Salt to taste, about 1/2 tsp (1 tsp salt for cooking the beans

Chili Walnut Dip (Cevizli Biber):
• 150 g dried red chilies, medium hot, de-seeded and washed
• 1 medium onion
• 1/2 cup walnut
• 1/3 cup breadcrumbs
• 4 tbsp olive oil
• 1/2 tsp ground cumin
• 2 tsp sumac
• 1 tsp salt
• Parsley to garnish
