Steak au poivre is a classic French recipe. It is a pepper crusted steak that gets finished with a peppercorn cream sauce with cognac. Fantastic steak recipe that is as easy to make as it is delicious. Perfect for date night without spending a ton of $$$ like you would going to a steak house.
Ingredients:
This makes enough sauce for two 10-12 oz ribeyes
2 ribeye steaks (filet is traditional, ny strip is also good)
1 shot cognac (brandy is good too)
1/2 c beef stock
3 tbsp green peppercorns
1 shallot (I used yellow onion since shallots were unavailable at the time of recording)
2 tbsp unsalted butter
1/4 c crushed black peppercorns
Salt and freshly cracked black pepper to taste
