Banana Bread For One | Single Serve
Banana Bread for One is the perfect breakfast or snack recipe. You only need half a ripe banana and 20 minutes. It has the same flavor and texture as banana bread.

Use a 6 oz. ramekin or oven safe ceramic mug: https://amzn.to/2GPvF3a
Preheat oven to 350 degrees F.
Ingredients:
1/2 ripe banana, smashed.
2 Tbsp flour
1 Tbsp sugar
1/8 tsp baking soda
1/2 Tbsp vegetable or canola oil, or melted butter
1 Tbsp beaten egg
1/2 tsp vanilla extract
healthy pinch of salt.
Mini cinnamon chips or mini chocolate chips, or chopped nuts, optional

Grease ramekin with non stick cooking spray.
In a bowl, smash banana. Add flour,, sugar, baking soda, salt, vegetable oil, egg, and extract.
Mix until just combined.
Add in nuts or chips.
Put batter into prepared ramekin.
Bake in 350 degree F oven for 18 minutes or until banana bread just begins to pull away from the sides and a toothpick comes out clean.
Cool for a few minutes and enjoy.
