S'mores Bars | Small Batch | Makes 4 bars
Filled with graham crackers, marshmallows and chocolate these ooey, gooey s'mores bars have all the flavor and texture of a s'mores but you don't need a campfire!

Ingredients:
1/4 cup butter, salted and softened
1/2 cup brown sugar, packed
1 egg
1 tsp vanilla extract
1/2 cup all purpose flour
1/4 tsp baking powder
1/4 tsp salt
1 cup of graham crackers (2 1/2 sheets, roughly chopped.)
1/4 cup mini marshmallows
1/4 cup chocolate chips, semi sweet
Grease or line a 9 x 5 bread pan with parchment paper.
In a bowl, combine butter and brown sugar. Stir to combine.
Add in egg and vanilla extract, mix.
Add in dry ingredients including flour, baking powder, salt, graham cracker crumbs.
Mix in marshmallows and chocolate chips.
Spread mixture into loaf pan. Bake at 350 degrees F for 18-20 minutes or until bars have firmed up in the middle and edges are golden brown.
The marshmallows will turn golden brown.
Cool and then remove from pan and slice.
