Spiced Apple Maple Bacon Chicken

Ingredients to make half the recipe below:
1 lb chicken breast halves, skinless and boneless
1 onion, yellow, medium, peeled and sliced
1/2 lb turkey bacon or regular bacon - I bought maple flavored
1/2 green bell pepper, cored and sliced
1 or 2 md apple, peeled, cored and sliced
1/4 cup pure maple syrup
1/2 cup chicken broth
SPICE MIX
1/4 tsp black pepper
1/2 tsp cayenne pepper
1 tsp garlic powder
1/2 tsp ginger
1/2 tsp cumin
1 tsp salt
1/2 Tbsp brown sugar
Directions:
Preheat the oven to 375 degrees.Cut up chicken breasts into large bite size cubes. Mix the spice mix together in a bowl and toss chicken in the mixture.
Cut up the bacon into bite size pieces and separate the slices as much as possible. Add the chicken, bacon, onion, peppers to a saute pan and cook to slightly brown and soften vegetables then add to a large casserole dish. Add half of the chicken broth.
Place the casserole in the oven about 15 minutes, uncovered.Meanwhile, toss the cleaned, peeled apple slices with the maple syrup.Take the casserole out of the oven and add the maple syrup and apple mixture and incorporate. Add the other half of the chicken broth and continue to bake an additional 35-40 minutes and garnish with sliced green onions if desired and it's done!
