Hello, this is Joconde. In this video, I was inspired by the chestnut tiramisu highly praised on the show 'Culinary class wars' and I decided to create my own version. While it differs significantly from the original recipe, I used store-bought peeled chestnuts, which were featured in the show. Initially, I was doubtful about how well the store-bought chestnuts would work, but the result was fantastic. I made a chestnut paste and combined it with mascarpone cheese and whipped cream, resulting in a very flavorful cream. If you can't get store-bought chestnuts, you can simply roast or steam regular chestnuts. However, I personally found the store-bought chestnuts made for a better-tasting paste!
Instead of using biscuits or cookies, as seen in the show, I opted for a sponge cake from a Tres Leches cake. Tres Leches cake is typically soaked in three types of milk, but for this recipe, I used a mix of espresso, milk, and sweetened condensed milk. This cake melts in your mouth! The rich and creamy flavors, combined with the chestnut cream, really elevate the nuttiness of the dish. When the tiramisu is left to chill in the fridge, the flavor becomes even more intense, giving you a truly indulgent experience with every bite. 200g store-bought chestnuts (or normal roasted or steamed chestnuts)
160g water
76g brown sugar
10g rum

1/8 tsp salt
1 egg yolk (approx. 20g) + 25g sugar
30g milk
1 egg white (approx. 35g) + 25g sugar
2g vanilla bean paste
♥︎ Chestnut Cream
130g chestnut paste
120g mascarpone cheese
10g icing sugar
6g rum
7g chestnut honey
110g heavy cream
8g sugar
21g milk + 3.5g powdered gelatin
♥︎ Condensed Milk Coffee
125g milk
110g espresso
50g sweetened condensed milk
