📋 INGREDIENTS:
• 800 g (1 ¾ lbs) potatoes, peeled and thinly sliced
• 2 carrots, sliced
• 1 zucchini, diced
• 1 Red bell pepper, sliced
• 1 onion, finely chopped
• 2 garlic cloves, finely chopped
• 300 ml (1 1/4 cups) plant-based cream, such as oat or soy cream
• 100 ml (1/3 cup) vegetable broth
• 2 tbsp nutritional yeast (optional, for a cheesy flavor)
• 1 tsp sweet paprika
• 1/2 tsp turmeric
• Salt and pepper to taste
• 2 tbsp olive oil
• Fresh herbs for garnish (e.g., parsley or chives)

🥘 Preparation:
• Preheat oven to 200°C (392°F).

• Heat olive oil in a pan and fry onions until translucent. Add garlic and sauté briefly until fragrant.

• Add carrots, zucchini, and bell pepper and sauté for about five minutes.

• Mix the plant-based cream, vegetable broth, nutritional yeast, paprika, turmeric, salt, and pepper in a bowl.

• Grease a baking dish, layer half of the potato slices in it, spread the vegetable mixture on top, and cover with the remaining potato slices.

• Pour the cream mixture evenly over the dish.

• Cover the casserole with aluminum foil and bake in a preheated oven at 200°C (392°F) for about 40 minutes. Then remove the foil and bake for another 10–15 minutes, until the surface is golden brown.

• Sprinkle with fresh herbs and serve hot.

This casserole tastes especially good with a fresh green salad or crusty baguette.
