Fresh homemade pasta is often made with eggs, but if you want an even richer taste you can make it using only the egg yolks! This gives your pasta a beautiful golden color and is super flavorful.
For every 100 grams of flour, you should use 2.5 yolks. That's roughly 6 yolks per 2 cups of flour. You may have to adjust the moisture a little bit since yolks don't all weigh the same! If your dough is very dry and crumbly as you are mixing it, add a little water. If it's very wet, and a little more flour. sometimes it takes a bit of practice to get it right!
