Smoothie:
2 bananas
frozen blueberries
spinach
1/2 avocado
1 date
1 scoop vanilla protein powder
soya milk
1-2 tbsp tahini
Potato leek soup:
3 tiny onions ( or 1/2 large cooking onion )
3-4 cloves garlic
3-4 small leaks ( 2 larger ones )
2 large golden potatoes
1/2 cup brown lentils ( rinsed and soaked for 30min - 4 hr )
1 tbsp lemon zest
3 tbsp tahini
3 bay leaves
1 tsp parsley
1/4 tsp thyme
1/2 tsp oregano
1 tsp fenugreek (optional but a nice addition)
chilli taste (optional)
2 tsp soup stock
salt to taste
1.5 - 2L of water
Sweet and Spicy Sauce:
2 cloves garlic
1/4" ginger
1 tbsp oil ( use sesame if you have it )
2 tbsp soya sauce
2 tbsp chilli jam ( my recipes here: • simple kitchen staples! )
1/2 tbsp gochujang
1/2 tbsp rice vinegar
Eggplant curry:
( I've made better - although I shared the recipe in the video, I'm going to make some modifications and try again in another video✨ )
