Coloring is based on the role. So, to change the color of a name, you would need to change the color of a certain role.
Roles are hierarchical. If you do have 5 roles, you will get the color of the highest role.
To set colors, you will need admin permissions. As a simple member of a Discord server, you won't be able to manually change the color of your name.
