The sky which was filled with dark rainy clouds during past days has finally allowed the sun to smile on my brother’s vegetable farm that has given a lushness to it. Since our garden has so many coconut trees , there is not much of sunshine falling onto the ground for a healthy cultivation. But I always thought that it is my brothers magic touch that gives a bountiful harvest. The red onions planted recently started to show very promising results already! The yummy omelet that my brother makes with chopped green onions, using well bedded kanda leaves pan lingers in my mind. Do you know what an expert cook my brother is? Grandmother always says that even a man should be useful in the kitchen, at least to pound a sambol and to cook a simple vegetable. Well she is right on that but no way that I will allow my dear brother to cook in my kitchen. Because as messy he is and if he cooks in the kitchen, half a day cleaning load falls onto me!
I always give the best credit for my brother for his very tasty omelette mixed with that pleasant taste of the kanda leaf which sends that fulfilling aroma across. The mushroom tempering with Maldives fish and chilli flakes gives the omelet an unforgettable taste and a look. He makes his famous omelet only when I make my tomato rice to go as a accompaniment! Somehow both this dishes goes very well wirh each other! It was a surprise that there were tomatoes in Aunt's tomato garden because during this rainy season tomato harvest is very scarce!
Tomato rice is widely known and popular in India. Since it goes well with the rice, I made a Raita salad (curd salad) by mixing curd and roasted green and red chilies, bit of cumin and bulbs of green onions adds a differently wonderful taste to it and transform into a wholesome meal. Last but not least , don’t forget to use a whole grain rice which separate easily when cooked for this delicious tomato rice!
