Recipe:
130g water (lukewarm)
6g active dry yeast
250g bread flour
30g granulated sugar
5g fine sea salt
25g unsalted butter
Beurrage (butter block):
138g unsalted butter
Once proofed, give another egg wash brushing, and bake at 200 degrees Celcius for 6 minutes. Then, bake again at 170 degrees celcius for 10-15 minutes or until they’re golden brown and puffy.
