Ingredients -
400g (14oz) - Spaghetti or Pasta of Choice
2 Tbsp (40ml) - Sun Dried Tomato Oil or Olive Oil
600g (1.3lbs) - Cherry Tomatoes or Regular Tomatoes
50g (1.7oz) - Sun Dried Tomatoes, Roughly Chopped
3 - Garlic Cloves, Roughly Chopped
30g (1oz) - Basil Leaves, Roughly Chopped or Torn
Seasoning To Taste
Parmesan Cheese To Serve
Notes -
The sun-dried tomatoes and oil are completely optional. Leave them out altogether and use regular olive oil instead.
Cherry tomatoes can be substituted for regular tomatoes. If you do this, dice the tomatoes.
Sugar is optional but cuts the acidity of the tomatoes and helps them caramelise, adding more flavour.
The basil stems can be saved and used to infuse other sauces such as tomato sauce-based pasta.
