Sunshine Strawberry Ricotta Lemon Loaf
Total Servings: 8-10 slices
Prep Time: 15 minutes
Cook Time: 50-60 minutes
Total Time: 65-75 minutes
Ingredients:
Loaf:
1 1/2 cups gluten-free all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup coconut sugar
2 large eggs
1 cup ricotta cheese
1/4 cup fresh lemon juice
Zest of 1 lemon
1 tsp vanilla extract
1 cup fresh strawberries, chopped
Glaze:
1 cup powdered sugar
2-3 tbsp fresh lemon juice
1/2 tsp vanilla extract
Instructions:
1️⃣ Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving some overhang for easy removal.
2️⃣ Prepare Dry Ingredients: In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Set aside.
3️⃣ Mix Wet Ingredients: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Then, add the ricotta cheese, lemon juice, lemon zest, and vanilla extract, mixing until well combined.
4️⃣ Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the chopped strawberries.
5️⃣ Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
6️⃣ Cool: Allow the loaf to cool in the pan for about 15 minutes, then use the parchment paper overhang to lift it out and place it on a wire rack to cool completely.
7️⃣ Prepare the Glaze: In a small bowl, whisk together the powdered sugar, lemon juice, and vanilla extract until smooth. Adjust the consistency by adding more powdered sugar or lemon juice as needed.
8️⃣ Glaze the Loaf: Once the loaf is completely cool, drizzle the glaze over the top. Let the glaze set before slicing and serving.
