COTTAGE CHEESE SCRAMBLED EGGS
Serving Size: 1 cup | Total Servings: 2 | Prep Time: 5 minutes | Cook Time: 5 minutes | Total Time: 10 minutes

Ingredients
4 large eggs
1 egg yolk
1/2 cup cottage cheese
2 tablespoons fresh chives, chopped
Salt and pepper, to taste
1 tablespoon grass-fed butter
Dash of extra virgin olive oil
Assemble
In a bowl, whisk the eggs and egg yolk until well beaten. Add a dash of extra virgin olive oil. This will make your eggs turn out fluffy.
Stir in the cottage cheese then season with salt and pepper to taste.
Heat the butter on medium-high in a non-stick skillet over medium heat.
As soon as the butter begins to brown, remove from heat and add the egg mixture, stirring immediately with a silicone spatula until the heat burns off. Then place over low heat to finish cooking to desired consistency.
Top with fresh chives and serve immediately. Enjoy!
