In this video I'm combining two of my favorite fried chicken dishes into one fired chicken sandwich. I'm taking the ingredients from Indian Chicken 65 and combining those with the techniques of American Nashville Hot Chicken, to make an Indian inspired spicy fried chicken sandwich.

Indian-Inspired Spice Mix:
• 2 tablespoons Kashmiri chili powder (or substitute with mild chili powder or paprika and cayenne pepper blend)
• 2 teaspoons garam masala
• 2 teaspoons brown sugar
• 1 teaspoon turmeric
• 1/2 teaspoon onion powder
• 1/2 teaspoon garlic powder
Chicken 65 Marinade:
• Half of the prepared Indian-inspired spice mix
• 1/4 cup plain yogurt
• 1 teaspoon freshly grated ginger
• 2 cloves grated or crushed garlic
• 1/2 teaspoon salt
• Juice of half a lemon
• Chicken thighs (as needed)
Sauce:
• 1/2 teaspoon grated ginger
• 1 clove garlic, grated
• Freshly ground black pepper (to taste)
• Half of a green chili, sliced and chopped
• Oil (for frying and sautéing)
• Tomato paste (1-2 teaspoons)
• 2 tablespoons plain yogurt
• Salt and sugar (to taste)
Coating for Frying:
• Plain flour
• 2 tsp spice mix
• Salt (1 teaspoon)
• Baking powder (1 teaspoon)
Sandwich Assembly:
• Red onion slices
• Pickle chips
• Buns
• Prepared Chicken 65 sauce
Instructions:
1. Prepare Spice Mix: Combine all the ingredients listed under "Indian-Inspired Spice Mix" in a bowl and whisk to combine.
2. Marinate Chicken: In a separate bowl, mix half of the spice mix with yogurt, grated ginger, crushed garlic, salt, and lemon juice. Add chicken thighs to the marinade, ensuring they are thoroughly coated. Marinate for at least an hour or preferably overnight.
3. Prepare Sauce: In a pan, sauté grated ginger, grated garlic, black pepper, and green chili in oil. Add tomato paste and remaining spice mix. Cook briefly, then remove from heat and allow to cool. Combine with yogurt, salt, and sugar to taste.
4. Coat Chicken: Prepare a coating mixture by combining flour, salt, baking powder, and remaining spice mix. Dredge marinated chicken in the flour mixture until evenly coated.
5. Fry Chicken: Heat oil in a frying vessel to 190°C (375°F). Fry coated chicken pieces until golden brown and cooked through (6-10 minutes). Drain excess oil on paper towels.
6. Prepare Spiced Oil: Mix remaining spice mix with hot oil from frying to create a flavorful oil.
7. Assemble Sandwich: Place red onion slices on the bottom bun, followed by pickle chips. Spread Chicken 65 sauce generously on the top bun. Place fried chicken pieces on the bottom bun, and brush with spiced oil. Top with the top bun and serve hot.
