This recipe uses an UNBELIEVABLY delicious chicken marinade that I've used for years. It's best for grilled chicken and pork chops or tenderloins. It's sweet and tangy, so it's perfect for the grill!
However.....we're not quiiiiite ready to bring the grill out... so I made these chicken drummettes in the air fryer with a small slice of bacon and holy wow - these were PHENOMENAL.
Marinade
(per 2 lbs of meat)
1/4 cup apple cider vinegar
3 tbsp ground mustard
3 garlic cloves, minced
juice of 1 lime
juice of 1/2 lemon
1/2 cup brown sugar substitute
1.5 tsp salt
1 tsp black pepper
6 tbsp olive oil
2 lbs chicken drummettes
thinly sliced bacon
Soak chicken in marinade at least 4 hours (overnight is best). Then, wrap each drummette with a thin slice of bacon and secure with a toothpick. Air fry at 375 for 20 mins. Then flip the chicken and air fry for another 15-20 mins or until bacon is cooked and crispy.
