Mexican Cabbage Salad
For the cabbage mixture:
1/2 head green cabbage (approximately 615g/22oz), finely shredded
1 red onion, thinly sliced into half moons
1 unpeeled hot house cucumber, roughly diced
1 bunch cilantro, coarsely chopped
Dressing ingredients:
The freshly-squeezed juice of 3 limes (1/2 cup/50ml)
2 tablespoons extra virgin olive oil
1 teaspoon lemon pepper
1/4-1/2 teaspoon salt, or to taste
1/2 teaspoon garlic powder
