A note about animating UI with the Unity animator:
The way that I've suggested in the video is possibly not the most optimal solution. In short, it updates the UI every frame, which means a hit in performance. A really popular video here ( • Why you should use code to animate yo... ) explains it well. However, this may have been patched by the Unity team since that video was published, so it may not even be a concern anymore. (See a comment here: https://imgur.com/7GnQ3gv.)
If you're up for it, you're probably better off using a tweening library, which avoids updating the UI every frame. Otherwise, I imagine for most hobbyist devs performance isn't really a concern, so the solution I suggested offers a convenient workflow that gives great results quickly. Be warned, though: this might have to be refactored if you run into a performance ceiling. Cheers!
