180g chicken breast
5g flour
30g egg whites
20g panko breadcrumbs
60g tomato sauce
60g fresh mozzarella or 30g shredded mozzarella
For the dry brining process add 1% salt to chicken and refrigerate for at least 1 hour or better overnight.
Bake in the air fryer or oven for 8-10 minutes at 200°C or 400°F until the chicken is slightly undercooked before adding the sauce and the cheese on top and baking it again for a couple of minutes.
