On Earth, gravity causes hot air to rise and cool air to sink, creating a flow that pulls burning fuel upward and allows fresh, oxygen-rich air to come in from below to keep the fire burning. As the flame rises, it cools from blue to orange as it loses heat to the surrounding air. In zero gravity, this process doesn't happen because buoyancy doesn't work. The burning fuel just floats around the wick, with very little oxygen coming in, so the flame gradually suffocates in its own fumes, staying mostly hot and blue.
