190g unsalted butter (125g + 65g),
softened
1 medium egg yolk
300ml milk, plus up to 3 tsp extra for
the buttercream
3 x baking trays
210g unsalted butter (110g softened
+ 100g melted)
3 medium eggs
20cm square tin
STORAGE

in a cool, dry place.
