Recipe in grams
200g Roasted Sweet Potato
500g Flour
60g white sugar
15g brown sugar
10g yeast
4 eggs
sprinkle of salt
1tsp pumpkin spice seasoning
1 stick of butter (8tbsp)
i doubled this in the video to make two trays
Beat sweet potato to smooth it out a little if you need to
Add everything but the butter to the mixer with the dough hook
Mix until a nice elastic dough forms, about 10-12
add butter and knead dough in mixer for another 15 minutes or so
until the dough isn't sticky and easy to handle. or passes the window pane test. ( Google the window pane test if you're unfamiliar its a really easy way to test if your dough is the right texture!!!)
Shape Dough and let double in size, time will depend on the temp of your home, or you can let it rise over night in the fridge
Once doubled, roll out the dough, spread fillings and shape your rounds
place in a tray for a second rise, before baking. These baked for about 20/25 minutes
Top with frosting and eat warm
