DHCP stands for Dynamic Host Configuration Protocol. It basically means "get assigned an IP address automatically".
Without DHCP, you have to manually type in IP and DNS settings on all of your devices. Thanks to DHCP, we just plug our stuff into our router and it's all done automatically.
Most of us would be best off just using DHCP because it's convenient and easy.
The reason you may not want to use DHCP is for a device with a special need. For example, a gaming device may need port forwarding configurations. Port forwarding would be annoying if your IP address was constantly changing because DHCP automatically changes your IP address sometimes.
