This video closely follows Matsuya, a famous kappo restaurant in Izumisano, Osaka that has specialized in blue crab（Watarigani）cuisine for 55 years and attracts gourmet from all over Japan.
I filmed the whole process from how to handle the precious blue crab to how the traditional blue crab full course is prepared.
Nowadays, domestic blue crab has become very rare and expensive, but there was a custom in the Kishiwada and Izumisano areas of Osaka to eat blue king crab together during the Danjiri Festival.
In order to preserve this memorable taste and traditional blue crab dish for the next generation, the number of craftsmen has been reduced due to the Corona disaster, and now the owner and his family are running the restaurant and struggling to keep it running.
