This past week I had the pleasure of meeting with Adam, the owner of the Cooks Edge on Prince Edward Island, Canada. Adam is a culinary school graduate, a former professional chef, a credited authentic Japanese knife retailer, and an expert on all things knife sharpening/maintenance.

At the storefront, Adam conducts knife sharpening classes which usually last about 2 hours and are very affordable if you are in the area and interested in learning about proper knife upkeep and maintenance. He was kind enough to offer me a very brief demo. This video could easily be 10 times longer but I did my best to condense a lot of the important information into something a bit more bite size. In this video, Adam shows me how to properly use a whetstone, how and when to hone your knife, the different tools you should use for keeping your knife in its best condition, and some other great information about his journey and experience.
