Rainbow Pancakes
140g Plain Flour
1 tsp baking powder
½ tsp salt
2 tbsp Sugar
140ml Milk
1 tsp Vanilla Extract
1 Egg
2 tbsp melted butter
Food colouring
1. Sift the flour, baking powder, salt and sugar into a large bowl.
2. In a separate jug, lightly whisk together the milk and egg, melted butter and vanilla extract.
3. Pour the milk mixture into the flour mixture and mix together until you have a smooth batter.
4. Divide the batter between 6 bowls and add food colouring. I chose, Red, Blue, Orange, Yellow, purple and Green but you can choose any colour you like.
5. Heat a non-stick frying pan over a medium heat. When the pan has heated, add a ladle of batter. When bubbles appear on the pancake, its ready to be flipped over.
6. Repeat for the rest of the batter.
7. Serve with maple syrup, sweetened whipped cream or butter.
