½ cup (115g) pumpkin, peeled, grated and packed
1 cup (150g) all-purpose flour
1 tsp ground cinnamon
¾ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup (100g) neutral oil, such as canola or vegetable
1 large egg
½ cup (100g) brown sugar (light or dark)
½ cup (120g) whole milk, at room temperature
½ tsp vinegar
