10 minute Creamy Tomato Pasta ( Makes 3 portions):
250g (9 ounces) Penne
2-3 tbsp of extra virgin olive oil
1/4 of an onion
1 cup (250)g tomato sauce ( I used Mutti, basil)
1/3 (80g) cup Heavy Cream
Fresh Basil
Salt and pepper to taste
Parmigiano

Chickpea Pizza Nuggets ( makes about 25 nuggets,about 3 portions)
400g (14 ounces) cooked Chickpeas
45g (1/4 cup) Bread crumbs
2 eggs
30g (1/4 cup) Parmigiano
1 clove of garlic grated
Salt and pepper to taste
1 tbsp of extra virgin olive oil
Origano, basil, any herbs/ spices you like.
Be generous with the herbs/spices.
Dry Mozzarella, cut into small cubes.
Process until smooth. If your mixture seems dry, you can add 2 tbsp of milk or water.
For the bread coating:
Bread crumbs
Salt/pepper to taste
Garlic powder
Onion powder
-2 eggs and 1/4 cup of milk

500g (18 ounces) Gnocchi
45g (3 tbsp) Butter
250g (9 ounces) mild Gorgonzola
Parmigiano
Salt and pepper to taste
