Ingredients:-
water 200 ml/ 0.8 cup
Sugar 250 gram/ 1 cup
Shredded Coconut 300 gram/ 3 cups
Condensed milk 500 ml/ 2.15 cups
method:-
• First, in a heavy-bottomed saucepan, add 200 ML water and 250 gram sugar.
• Place the pan over medium heat and stir until the sugar dissolves completely.
• Instead of regular sugar, you can use brown sugar to give the Cocada a deeper caramel flavour and dark colour.
• Once the sugar dissolves, Allow the syrup to simmer for about 5-10 minutes.
• The syrup will gradually thicken as the water evaporates.
• To check if the syrup is thick enough, dip a spoon into the syrup, if the syrup drips slowly off the spoon in a thick, sticky consistency, it's ready.
• It should not form threads.
• Once the sugar syrup is thick and ready, add 300 gram shredded coconut to the pan. or you can use fresh grated coconut if want.
• Stir the coconut into the syrup, ensuring it's evenly coated and well mixed.
• Lower the heat to the lowest setting and continue cooking for 2-3 minutes, stirring frequently.
• This allows the coconut to absorb the syrup without overcooking or burning.
• After cooking the coconut in the syrup, pour in 500 ml sweetened condensed milk.
• Stir the mixture continuously and cook on low to medium heat for about 8-10 minutes, or until it thickens and starts to pull away from the sides of the pan.
• You can add Mix dried fruits like raisins, dried cranberries, or apricots if you want.
• And, Feel free to add flavourings like vanilla extract, cinnamon, or citrus zest for a twist.
• The mixture should become creamy and sticky but not too dry.
• As the mixture thickens, keep stirring to prevent it from sticking or burning.
• Once the mixture is thick, remove it from the heat.
• Once cooled, Spoon the mixture into a tray.
• Or, you can Transfer the mixture to a greased tray.
• Spread it out evenly using a spatula.
• Once cooled, cut the Cocada into squares or desired shapes.
• Let it cool at room temperature until it sets.
• Your sweet, chewy homemade Cocada is ready to be enjoyed!
• For Best Flavour, use freshly grated coconut enhances the flavour and texture.
• If fresh coconut isn’t available, use shredded coconut, but fresh is ideal for a moist and rich cocada.
