Protein-Packed Smarties Cookies
Ingredients:
2 scoops of your preferred protein powder
1 tablespoon peanut butter
1 tablespoon pumpkin puree
1 tablespoon coconut flour
1 tablespoon ground almonds
1 tablespoon oat flour
1 egg
Smarties (for topping)
Instructions:
Preheat the Oven: Set the oven to 160 degrees Celsius (320 degrees Fahrenheit) and line a baking tray with parchment paper.
Prepare the protein Cookie Mix: In a mixing bowl, combine the protein powder, peanut butter, pumpkin puree, coconut flour, ground almonds, oat flour, and the egg. Mix thoroughly until all ingredients are well combined and form a dough-like consistency.
Form the Cookies: Take portions of the cookie dough and shape them into cookie-sized rounds. Place these onto the prepared baking tray, leaving space between each cookie.
Add Smarties Topping: Gently press a few Smarties onto the top of each cookie.
Bake: Place the baking tray in the preheated oven and bake the cookies for approximately 12 minutes or until they are lightly golden around the edges.
Cool and Enjoy: Once baked, remove the cookies from the oven and allow them to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely. Enjoy these protein-packed Smarties cookies as a delicious snack!
