How do you grill Picanha on the BBQ? Especially when you're not in Brazil. Well, for starters I don't try to do it all in one chunk. There's no point. I just cut the Picanha into big fat steaks and cook them with all the fat they come with. The Argentineans call it Tapa de Cuadril and the English call it Cap of Rump. Regardless of what you call it, it's one of the most beautiful beefs you can ever BBQ.
