How to Butcher a FULL Lamb into Roasts // Matt the Butcher
In this video, we're going to be breaking down an entire lamb carcass into roasts. I'll show you how to break it down from your own kitchen, with just a boning knife, a hack saw, and some butcher's twine.
This particular breakdown is for what we call a "Lamb Share" where a group of people coordinate to buy a whole lamb from a local farmer, have me break it down, and then they each get a quarter of the lamb for their household.
I'll be publishing a separate video on the rules of the Lamb Share, which can be used for any type of carcass (ie. cows, pigs, goats, etc), and how you can recreate one.
