Today we are with baker, recipe writer and Great British Bake Off contestant Benjamina Ebuehi as she makes a malted brown butter loaf cake from her new book, A Good Day to Bake.
Heavy with butter, a pound cake is dense in texture yet has a beautiful golden crumb which helps keep the sponge moist. It is best served thickly alongside a big mug of tea.
This cake is one that gets better with age so it’s the perfect bake to make ahead.

Ingredients:
250g unsalted butter, softened, plus extra for greasing
250g caster sugar
2 tsp vanilla extract
3 large eggs, at room temperature
250g plain flour
2½ tbsp malted milk powder (such as Horlicks)
1 tsp baking powder
½ tsp fine salt
120g soured cream, at room temperature
