Most figs will change color as they ripen and differ in hue depending on the variety. Immature figs are usually green and small. We pick them when they are soft to the touch when gently squeezed and drooped downwards. Occasionally, we notice figs oozing with sweet nectar from the eye (ostiole). If you see a milky white sap (latex) leaking from the stalk and on the tree when picked, the fig is not fully ripe.

These are the breba (early crop) of Peter’s Honey figs and are succulent and sweet. I noticed some stink bugs surrounding the ripening figs, so I covered them with organza bags.
