Favorite meal of my mother in law - this tells it all !!
Turn to vegetables to fight obesity epidemics. Meat in moderation with a lot of vegetable is also healthy. Hot soup is filling and nutritious. Easy to prepare - you just can not mess it up. Lunch or dinner for ~1$ a serving. Freeze portions to enjoy later.
You will need: meat (beef with bones 1-2 Lb), 5-6 medium potatoes, cabbage, ~4 red beets, 3 large carrots, one bell pepper, one large onion, oil, bay leafs, pepper, salt, crashed tomatoes. Serve with toast and sour cream. Fresh garlic is optional.
