Come along with me today as we tackle the post-vacation messes! My home needs a little extra attention this week. I'll share some yummy meals throughout the day too so we can stayed fueled to tackle this cleaning!

RECIPES:
Pizza dough for stromboli bites:
3 cups flour (+more for rolling)
1 tsp sea salt
2 1/4 tsp. yeast
1 cup warm water
2 tbsp olive oil
2 tbsp sugar (or honey)
In a stand mixer with the dough hook attachment add the flour and salt. In a separate bowl combine warm water, yeast and sugar or honey until bubbly and dissolved. Turn on the mixer and slowly pour in the water mixture. Continue to run mixer on low and add the olive oil. Blend and knead just until combined and pulling away from the sides of the mixer. Cover and allow to rise for 5 min (longer if not using an instant yeast). This recipe usually makes two smaller pizzas or on every large Stromboli.
For breakfast bites: add 1/3 cup melted butter and 1 tsp garlic salt to the rolled out dough. Top with cooked sausage and eggs and then sprinkle with sharp cheddar cheese. Roll up and cut like cinnamon rolls and place on parchment paper. Bake at 350 degrees for about 15 minutes.

Cucumbers & Onions (Refrigerator Pickles):

3-4 Cucumbers, peeled and sliced
1 Medium Onion
2 cups sugar
2 cups vinegar
2 tsp salt
Combine the sugar, vinegar and salt and stir until sugar is dissolved. Layer in a large bowl cucumbers and onions. Pour the brine over the cucumber mixture and allow to set in the refrigerator for at least 48 hours.

Homemade Taco Seasoning:
4 Tbsp. Paprika
2 Tbsp. Cumin
3 tsp. Onion Powder
2 tsp. Garlic Powder
2 tsp. Salt
2 tsp. Pepper
2 tsp. Oregano
1 tsp. Crushed red pepper flakes
(I made two batched in this video) When seasoning, start with 2 Tbsp of seasoning per 1 lb of ground meat.

Cilantro Lime Mayo:
1 egg yolk
1 cup avocado oil
1 tsp. lime juice
1 tsp. vinegar
1 handful of cilantro
1/2 tsp garlic salt
1/2 tsp. cumin
1/2 tsp chipotle pepper *optional
Carefully place the egg yolk in the bottom of a wide mouth mason jar (do no break the yolk). Add the lime juice & vinegar. Carefully pour over the oil. Place an immersion blender wand directly over the yolk and blend for 10-15 seconds holding in place. Once you see the bottom of the jar beginning to look white like mayo, slowly work your immersion blender up the sides of the jar to incorporate the rest of the oil into your mayo. Drop in the cilantro and additional seasonings & blend again. Enjoy!
I store my homemade mayo in the fridge for up to a week.

Pico de gallo:
Tomatoes, diced (I prefer roma tomatoes)
Onion (red onion is great too!)
Garlic
Cilantro
Lime juice
Jalapeno (optional)
Salt and pepper
Cumin
