These cookies are a quick and delicious breakfast for your toddler. Made with simple whole ingredients and have no sugar.
In a food processor or blender combine
1 1/4 C oatmeal
1 very ripe banana
2 tbsp peanut butter or other nut/seed butter
1 egg
1 tsp vanilla
1/4 C applesauce
1/4 tsp cinnamon
Blend just until all ingredients are incorporated. On a parchment lined cookie sheet drop batter. I did 2 Tbsp scoops, flatten cookie to about 1/4" Bake at 350° for 10-12 minutes. Cool and store in a zip top bag, or in the freezer.
