Choice edible wild mushrooms are still available even in the winter time. Aaron Hilliard, creator of Mushroom Wonderland and Mushroom educator from Western Washington State, takes us into the forest to see what amazing wild edible mushrooms can be foraged this time of year. Although the hood canal area of Washington state is not known to ever really get buried in snow for long, and is considered a temperate area, the mushrooms do have a tendency to get water logged after several months of steady rain here in the Pacific Northwest. But there are still great mushrooms to be foraged if you look in a similar forest. In this video we encounter winter chanterels, also sometimes called yellowfoot, scientifically known as Craterellus tubaeformis, they delicious mushroom that associates with trees and can grow in big troops. We also encounter hundreds of lobster mushrooms, Hypomyces lactifluorum, which are actually a parasite on a host mushroom which is in relationship with the trees - quite a delicious edible mushroom if found in season. Although they've been fruiting since summer, Pacific Golden Chanterelles, Cantharellus formosus, are still fruiting. Some of them mushy, some of them perfect. They are probably the most popular edible wild mushroom in this area. And the amazing hedgehog mushroom which likes to come out in the colder months inland, Hydnum umbilicatum, is one of the best edible wild mushrooms that can be found this time of year. We also encounter several other species which Aaron will help to identify with the help of his trusty hound lab Gunnar.
