Cashew Butter Cookies
Ingredients for about a dozen cookies
1 large egg
1 teaspoon baking soda
1/3 cup Demarara sugar (78g)
1/4 teaspoon salt
1 cup pure, unsalted cashew butter
In a medium bowl, whisk together the egg, baking soda, sugar, and salt. Add the cashew butter and stir with a stout spoon until the dough becomes quite stiff -- about 1 minute. Refrigerate the dough for 30 minutes.
Break off small clumps of dough and form them into balls the size of cherry tomatoes. Lay the balls about 2 inches apart on a parchment-lined baking sheet. Use your fingers to lightly flatten the balls. Put the baking sheet in the refrigerator or freezer while you preheat the oven to 350F or 180C.
Bake until cracks form in the tops of the cookies -- 10-15 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack. The cookies will form up as they achieve room temperature.
