Raspberry lemon cake, which is a truly scrumptious raspberry lemon loaf cake, which is great for all year round. This loaf cake recipe is easy, and makes a change with the usual lemon loaf cake recipes. Many think that making this lemon raspberry cake from scratch will be hard, but it is quite the opposite.
Raspberry cake has long been a favourite in this house. It's the tart fruit against the sweet cake that makes it a winner. It never stays in the cake dome for more than a day (true story) as it often gets made into a raspberry and lemon cake pudding, with the addition of custard, ice cream or cream.
I have decorated mine with coconut on top, but this is an optional extra. So if you do not like coconut cake, then you can simply not add it. I also make this with white chocolate curls on top too.
I do think this will make a great coronation cake, as it has such vibrant colour but still sophisticated. What makes this raspberry lemon cake so tasty is that there is Greek yoghurt in the cake, giving it a lovely taste and texture.
