Easy Peasy 15-min Vegan Black Sesame Noodles by @droolcookclub

INGREDIENTS
1 tbsp Sriracha
1 tbsp brown rice vinegar
3 cloves garlic, finely minced
1⁄2 tsp ginger, finely minced
1⁄2 cup vegetable stock
1 tbsp coconut oil or olive oil
1 tsp sesame seeds, toasted
1 – 2 tbsp spring onions, chopped
2 oyster mushrooms, sliced diagonally
2 servings Handpicked Black Sesame Noodles
METHOD
Heat up the coconut/olive oil in a saucepan, add the minced garlic and ginger, fry till slightly translucent. Add the rest of the ingredients, and let simmer to a slow boil. Remove and keep it in a bowl, leaving about 1/3 of the sauce in the pan and add the sliced oyster mushrooms to braise for about 15 min. Add some water/veg stock if it is drying up.
In the meantime, boil some water in a pot to cook black sesame noodles. Add black sesame noodles once the water comes to a rolling boil. Cook noodles for 50 sec, then drain and add it into the bowl of sauce. Mix well and plate it into two portions. Top noodles with the braised mushrooms, garnish with chopped spring onions and sesame seeds.
Ready to serve!
