Today we’re making delicious, soft, and fluffy dinner rolls! These are perfect for any occasion—whether it's a family dinner, a holiday meal, or just a cozy night in.
Ingredients:-
Milk: 0.83 cups (about 200 ml) 6.76 ounces
Yeast: 2.15 tsp (about 6 gm) 0.21 oz
Bread Flour: 3.33 cups (about 400 gm) 14.11 ounces
Egg: 1 (medium size)
Sugar: 0.1 cup (about 20 gm) 0.71 oz
Salt: 0.5 tsp
Butter: 0.13 cup (about 30 gm) 1.06 oz
Honey: 1 tbsp
Method:
1-Prepare the Wet Ingredients:
In a mixing bowl, combine 200 ml full-fat milk and 20 gm sugar. Stir until the sugar is fully dissolved.
Add 6 gm instant yeast directly into the mixture (no need to activate it), and mix thoroughly.
Add 1 tbsp honey and stir to combine. This will give the rolls extra sweetness and help them stay soft.
Crack 1 medium-sized egg into the bowl and whisk everything together until smooth.
2-Mix the Dry Ingredients:
In another bowl, combine 400 gm of high-protein bread flour and ½ tsp salt. Mix well to evenly distribute the salt.
Tip: High-protein bread flour helps create a soft, fluffy texture. If using all-purpose flour, reduce the liquid slightly, as all-purpose flour absorbs less moisture.
3-Combine Wet and Dry Ingredients:
Gradually pour the wet ingredients into the dry flour mixture. Use a spatula or wooden spoon to mix everything until a rough dough forms.
If the dough feels too dry, add a small splash of milk or water to bring it together. The dough should be a little sticky but not too wet.
4-Knead the Dough:
Turn the dough out onto a clean, lightly floured surface. Start kneading the dough for 2-3 minutes to get it going.
After a few minutes, gradually add 30 gm softened butter in chunks. Continue kneading for another 12-15 minutes, until the dough becomes smooth, elastic, and slightly tacky.
Tip: If you’re unsure if it’s ready, perform the "window pane test." Stretch a small piece of dough between your fingers. If it stretches into a thin, translucent sheet without tearing, it’s ready.
5-First Rise:
Place the dough into a lightly oiled bowl and cover it with a clean kitchen towel or plastic wrap.
Let the dough rise in a warm place for 1 hour, or until it has doubled in size. If your kitchen is cool, place the dough in the oven with just the oven light on, or place a bowl of warm water in the oven with the dough to create a warm environment.
6-Shape the Rolls:
Once the dough has risen, punch it down gently to release any air bubbles.
Divide the dough into 12 equal pieces. Use a kitchen scale for perfect, even-sized rolls. This helps ensure that each roll bakes evenly.
Shape each piece of dough into a ball by tucking the edges underneath. Place the shaped rolls on a lined baking tray, arranging them close together for soft, pull-apart rolls.
7-Second Rise:
Cover the rolls again with a towel or plastic wrap and let them rise for another 30-45 minutes, or until puffy.
After the second rise, brush the rolls lightly with milk for a beautiful, shiny finish. This will give them that gorgeous golden sheen once they bake! Or , Brush them lightly egg wash just before baking.
8-Bake the Rolls:
Preheat your oven to 170°C (340°F). Once the rolls have puffed up, place them in the oven and bake for 18-20 minutes, or until the tops are golden brown.
9-Finishing Touches:
Once out of the oven, let the rolls cool slightly on a wire rack. While still warm, brush the tops with melted butter for a soft, golden finish.
Tip: Brushing the rolls with butter right after baking helps them stay soft and adds an extra layer of flavour.

1-Not Using the Right Flour:
For fluffy, soft dinner rolls, use high-protein bread flour. It gives the rolls the right structure and chew.
2-Not Measuring Ingredients Accurately:
Always measure ingredients carefully. Use a kitchen scale for the most accurate measurements, especially for flour, and adjust the liquid based on the flour’s protein content.
3-Under mixing the Dough:
If you don’t mix the dough enough, it can lead to uneven texture and lack of rise. Knead the dough for about 12-15 minutes.
4-Not Allowing Enough Rise Time:
Not giving the dough enough time to rise properly. This can result in dense rolls that don’t have that light, airy texture. Always let the dough rise until it doubles in size.
5-Over proofing the Dough:
Letting the dough rise for too long during the first or second rise can cause it to collapse or become too airy, resulting in flat rolls.
6-Not Adjusting Liquid Levels for Flour Type:
Using too much or too little liquid depending on the type of flour can result in dough that’s too dry or too sticky. High-protein bread flour needs more liquid than all-purpose flour.
