Scallops are crustaceans. They are bivalve molluscs - meaning the internal muscle is surrounded by two shells - and related to oysters and clams. There are many varieties of scallops, but the most common are small bay scallops and large sea scallops. Their taste and texture are quite delicate, and after a quick frying in a pan, they are incredibly sweet and delicate.
You only need a short list of ingredients to make this scallop recipe, but the end result is fantastic!
Sea scallops – these are the stars. Make sure you buy large sea scallops and not small bay scallops.
