5 top tips for foolproof cake icing!
1. Chill the cake for 15 minutes before the first layer of icing
2. Crumb coat the outside of the cake with a very thin layer of icing, and then chill again before doing the final layer. This locks in the crumbs so they don't mix in with your icing.
3. Keep a mug full of boiled water beside you to dip your palate knife in, it'll stop it from dragging the cake, as you glide around.
4. Use a turntable, if you have one. It means you can hold the palette knife, steady and get a smooth motion as you go around the cake.
5. Hold the palette knife flat against the cake using minimal pressure.
