If you don't want to add a nitrite salt, you can't add it. But the nitrite salt adds flavor to the ham. I recommend trying it and you will see for yourself how delicious it is.
Ingredients:
Chicken breast - 2 halves (approx. 470 g)
Salt - 18 g (mixture of table salt and nitrite salt 50/50)
Black ground pepper - 1 tsp
Paprika - 1 tsp
Garlic - 1 tsp
Syringe - the biggest is better
