Hazelnut Butter Cookies
Ingredients for about one dozen 2-inch-diameter cookies
1 cup (234g) pure, unsalted hazelnut butter, well-stirred
1/2 cup (100g) granulated sugar
1 large egg, beaten
Pinch of salt
For topping the cookies: a sprinkling of Demerara sugar

Center the oven rack, and preheat the oven to 325F (160C). Line a baking sheet with parchment.

Tip the hazelnut butter, granulated sugar, egg, and salt into a medium bowl. Stir vigorously with a stout spoon until the mixture becomes quite thick -- about 1 minute.

Use a cookie scoop to form cookies, and place them on the prepared baking sheet. (Alternatively, you can pinch off cherry tomato-size clumps of dough, and roll them between the palms of your hands.) Gently press down on the cookies to flatten them slightly. Top with the Demerara sugar.

Bake until the cookies develop a crisp edge -- 15-20 minutes. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. The cookies will firm up as they cool.
