For vegan Borscht omit the meat and skip the first cooking cycle. Replace at least half of the water with broth, and cook all the prepped veggies in it for 5 minutes at high pressure.
INGREDIENTS:
• 1-1/2 pounds stewing beef chunks, optional
• 1 tablespoon olive oil
• 2.5-3 quarts water, use part veggie broth in meatless version
• 2 bay leaves
• 1 tablespoon salt
• 3 medium potatoes
• 1/2 head white or purple cabbage
• 1 large onion
• 2 medium carrots
• 1-2 large beets
• 1 medium tomato
• 1/2 teaspoon black pepper
• 1 teaspoon dried parsley or 1 tablespoon freshly chopped
• 1 teaspoon dried basil or 1 tablespoon freshly chopped
• 1 tablespoon dried dill or 2 -3 tablespoon freshly chopped
