This is such an easy, simple recipe for muffins that will help you stay on track 💪🏼 This recipe is:
keto friendly
low carb
high in protein
gluten-free
customizable with any fruit
This recipe makes 12 muffins and with the ingredients I used, each muffin comes out to:
4.5 net carbs
9 grams of protein
13 grams of fat
(for additional fat, I like to slice one in half, heat it up in the microwave & slab some butter on each side 🤌🏻)
Muffin Recipe
2.5 cups almond flour
3 eggs
8 oz yogurt (plain or vanilla flavored)
1/4 tsp salt
1/4 cup sweetener
1 tsp baking soda
1 cup blueberries, or other berry/nuts/etc
(optional: 1/4 cup sugar-free chocolate chips)
Bake in a muffin tray at 400 degrees for 20 mins or until the tops of the muffins are golden. Let cool completely before removing from the tray. enjoy within 4-5 days.
