Beef Cow Tongue/Lengua de Vaca/3 Recipes
In a crock pot slow cook:
3 lb beef cow tongue
1 tablespoon bouillon
3 Bay leaves
1/4 onion
2 garlic cloves
water enough to submerge
Cook on high 4 1/2 hours and remove outer tough skin.

chop desired pieces of tongue mixed with mayonnaise, pinch of salt, and pepper.
add tomato, lettuce, and pickles between 2 pieces of bread.

LENGUA TACOS WITH AVOCADO SALSA
Avocado salsa Verde for beef tongue tacos
1 avocado
1/2 chopped tomato,
1/2 jalapeno,
1/8 piece onion,
small bunch of cilantro
7 oz salsa Verde
1/4 tsp salt
1/4 tsp Pepper
1 tsp of lime.
For tacos, add beef tongue to corn tortillas. Top with Avacado salsa Verde

LENGUA BURRITOS
Avocado/Tomatillo sauce for Lengua burritos
Pot full of boiling water
1 large tomato or 2 small
1 jalapeño
2 garlic cloves
1/2 onion
1 large tomatillo or 2 small
boil above ingredients until softened. Then, add the following ingredients, along with the boiled ingredients, to a blender until all ingredients are mixed.
1/2 cup water
small bunch of cilantro
1 tsp. each:
salt
pepper
oregano
cumin
bouillon
In a skillet:
1 tbsp canola oil
sauté tongue for 2 minutes and add some sauce. Serve with flour tortillas.
